Produced in Italy, and ripened for up to two months, Taleggio is a fantastic washed rind soft cheese made from a both pasteurised and unpasteurised cow’s milk. It has a pretty thin coral pink rind and a wonderfully creamy ivory core. Taleggio has a strong aroma; however the taste is comparatively mild and creamy with a fruity tang. It is perfect draped over warm salads and paninis, or melted in risottos and pasta dishes.
